Blueberry Square Cake

This was a simple and easy recipe to do...I served this with bit of whipped cream...Excellent...
2-1/2 sticks margarine
1-1/2 c. sugar
4 eggs, separated
2 c. flour
1 tsp. vanilla
1 can blueberry pie filling
Beat egg whites until stiff and set aside. Cream margarine and add sugar, egg yolks, flour and vanilla to margarine. Beat well. Fold in egg whites by hand (batter will be thick). Spoon into 11 x 8 inch Pyrex pan. Drop pie filling by tablespoons on top of batter. Bake 40 minutes at 350 degrees.

Cornflake Oven Fried Chicken

I made this last night for supper...It was really good...nice and tender...I used boneless chicken...and served the chicken with baked potato wedges...
1 c. crushed corn flakes
1/4 garlic powder
1/2 tsp. onion powder
1/2 tsp. paprika
1-1/2 tsp. Italian seasoning
1 chicken, cut in pieces and skinned
Preheat oven to 350 degrees. Mix cereal and spices. Roll damp chicken in mix and place on nonstick baking sheet. Bake uncovered for 1 hour. Serves 6.
